Taken from curatorial worksheet "Tsirku Canning Co. has recreated a salmon canning line with antique equipment gathered from canneries around the state of Alaska. The equipment, which dates to the 1920’s, has been meticulously reconditioned and is in perfect working order. The cannery has the only three-piece can reform line left in existence. It is used to shape flat metal pieces into a usable can." Taken from curatorial worksheet "Canning, as a means of transporting fish to market, most likely got its start in the 1830s in Scotland and then moved to the Atlantic coast regions of Maine and New Brunswick where canning of lobster and salmon began in the 1840s. The salmon canning industry in Canada peaked in the 1920s and came to dominate the fishery because it was an “industrial solution” to problem of food preservation. The salmon canning industry was not as affected by technological change as other industries were. Although canning plant operators adopted key mechanical innovations from the 1880s onward, they were techniques transferred from other branches of the food processing industry, which had their start in American canning plants. The use of solderless can-making machinery, introduced in the early 1900s, and vacuum closing machine, in the 1920s, allowed plants to substantially increase their ability to handle all the fist available to it during periodic gluts without necessarily increasing the size of the plant or the workforce."
