Hand-operated cream separators began appearing on Canadian dairy farms in the 1890s and their opeartion becamse part of the daily routine of farm women for many decards. Farm separation ensured that farmers got full value for their butterfat production of their dairy herds, while the seperator's higher butterfat yields stimulated the grown of cream gathering creameries.

Function

Separators separate cream from milk by applying centrifugal force.

Technical

Applying centrifugal force to whole milk forces heavier cream from the fluid milk. Cream and skim milk are the resulting products. This separator features conical metal disks that increase the effiency of cream seperation so that only 0.05% of fat remained in the skim milk. This technological innovation was introduced in the 1890s by De Laval and was incorporation by a number of manufactuers.
