The donor worked in the dairy research field most of his life at Agriculture Canada, working with Dr. Doug Emmons first at the Dairy Technology Group, then at the Dairy Technology Research Institute followed by the Food Research Institute and Food Research Center. He co-authored several research articles during his career. Previous to this, he worked as an inspector of Dairy Products for the Federal Government for about one year in Montreal and Toronto, ca.1952, inspecting commercial and retailed dairy products -butter, cheese, ice cream, powdered milk, etc. Eastern Dairy School used to be the Dairy School. They moved to Kemptville, Ontario around 1937. Mr. Donald Beckett studied in the Dairy course in Kemptville in 1946. His father, Noel Beckett, owned different creameries in his life. He might have studied in Kingston at the Eastern Dairy School. Material used to wrap a quantity of butter to keep it longer. Matériau utilisé pour envelopper une quantité de beurre afin de le conserver plus longtemps.
Technical
Butter was kept in the past in linen cloth and put in a tub called firkin or in a butter crock. Paraffin paper began in the 1880s and 1890s as butter wrappers. Later, in the early 1980s, Dr. Douglas Emmons with Don Beckett, both working at the Food Research Centre at the central experimental farm (Agriculture Canada), did research that concluded that the paraffin let the UV light affect the butter by photo-oxidation both in flavour and appearance. Since then, a light-weight aluminium butter wrapper has been used in Canada to sale retail butter. Autrefois, le beurre était conservé dans une toile de lin et placé dans un bac appelé "firkin" ou dans un "butter crock". Le papier paraffiné a commencé à être utilisé dans les années 1880 et 1890 pour emballer le beurre. Plus tard, au début des années 1980, le Dr Douglas Emmons et Don Beckett, tous deux travaillant au Centre de recherche alimentaire de la ferme expérimentale centrale (Agriculture Canada), ont mené des recherches qui ont abouti à la conclusion que la paraffine laissait la lumière UV affecter le beurre par photo-oxydation, tant au niveau du goût que de l'apparence.
