Place in sauce pan four ounces diced Canadian cheese, 2 tablespoons Ale, 1 teaspoon prepared Mustard, pinch Cayenne Pepper - stir on slow fire until consistency of thick cream, smooth and free from lumps. Pour over two poached eggs on buttered toast. Serve very hot.
